White Quinoa Chicken Soup

Pressure cooking is so great and it adds to flavor and saves time.


Ingredients

4 large chicken breasts, cubed

1 onion, diced

2 large cloves of garlic, minced

1 Tablespoon minced or grated ginger

3 Tablespoons Olive Oil

¼ cup Haco chicken soup base

½ cup rice

¾ cup quinoa

¼ pound pasta

3 quarts water

Salt and pepper to taste



Directions

In a large pressure cooker (I use the 8 qt. electric), turned on high, add the oil, onion, garlic, and ginger. Sauté for a couple of minutes and add chicken. Continue cooking for a couple of minutes. Add the grains and pasta with water and soup base. Place lid on pressure cooker and cook for 7 minutes. Release pressure and salt and pepper to taste.
