Balsamic Vinaigrette
Ingredients
1/2 cup extra virgin olive oil
1/2 cup white balsamic vinegar
1 clove crushed garlic
1 teaspoon ground mustard
1 pinch salt
ground black pepper to taste
Directions
1.In a small bowl, whisk together olive oil, white balsamic vinegar, garlic, and mustard powder. Season to taste with salt and black pepper. Stir in minced fresh herbs if desired.
Red Raspberry Vinaigrette
Ingredients
1/4 cup olive oil
1 cup seasoned rice vinegar
1 (10 ounce) jar seedless raspberry jam
Directions
1.Combine the olive oil, rice vinegar and raspberry jam in the container of a blender. Process until smooth. Store in a jar in the refrigerator.
Garlic & Basil Vinaigrette
Ingredients
1/2 cup fresh basil leaves, chopped
2 tablespoons chopped fresh garlic
1/4 cup balsamic vinegar
3 tablespoons grated Parmesan cheese
2/3 cup olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions
1.Combine the basil, garlic, balsamic vinegar, and Parmesan cheese in a blender. Blend until ingredients form a paste. Slowly pour olive oil into the mixture and continue to blend until smooth.
2.Add salt and pepper to taste. Whisk before serving.
White Wine Vinaigrette
Ingredients
1/3 cup vegetable oil
1/3 cup white wine vinegar
2 cloves garlic, minced
1 tablespoon white sugar
1/2 teaspoon salt
1 pinch ground black pepper
Directions
1.Place the oil, vinegar, garlic, sugar, salt and pepper into a jar with a tight fitting lid. Close the lid, and shake vigorously to blend. Use right away, or store in the refrigerator for up to two weeks.
