Mexi-Veggie Roll up

Don't know what to do with those left over veggies in the fridge?  Try this recipe out

Mexi-Veggie Roll up

1 10" Whole-wheat or low carb tortilla
1 c assorted fresh shredded or finely chopped veggies (carrots, green peppers, onions, zucchini, spinach, celery, radishes)
1/4 c low fat mozzarella cheese, shredded
1/4 c cooked brown rice
1/3 c boiled or canned black beans
2 tbsp salsa

Spread diced vegetables (of choice) down the center of the tortilla.  Top with beans mixed with salsa.
Fold over filling
Heat in an electric grill or sandwich panini until cheese melts.
Enjoy!
