Amaranth Potato Pancakes

Ingredients


½ recipe of the Savory Amaranth Pilaf (see recipes)

To that add:

3 eggs

1 ½ cups whole wheat flour

2 cups hash browns

2 t. Rumfords baking powder



Directions

Whisk all of the ingredients together in a bowl. Heat a non stick skillet with olive oil. Pour or spoon in batter to make pancakes. Cook for about 2 minutes on each side or until golden brown.

Serve with warm sugar=free maple syrup.
