This is a great side dish for fish or chicken. The left over can be used to make Amaranth Potato Pancakes (see recipes)
Ingredients
2 T. olive oil
1 shallot, minced
2 T. parsley
¼ cup raisins
¼ cup pistachios
4 cups vegetable broth
2 ½ cup amaranth, whole grain uncooked
Pinch salt and pepper
Directions
Add oil in a medium pot and sauté the shallot and parsley. Add in raisins, pistachios, broth, amaranth, salt and pepper. Bring to a boil, then drop the heat to medium and simmer for 10 minutes. Let pilaf set for 10 minutes.
Serve this as a side dish, or use to make the "Amaranth Potato Pancakes".
